Easy Mexican Food in 30 Minutes Taco Rice Recipe

Are you looking for that go to easy weeknight meal?

Taco Rice is your answer for a quick 30 minute meal for busy nights.

I created this meal out of necessity for an easy and a quick dump meal like tasty taco soup.

Taco Rice one Pan meal for busy nights

Ingredients needed for Taco Rice Meal

1 can 15 oz can black beans
1 can 15 oz corn
1 can 15 oz tomatoes (or roasted tomatoes for a smoky flavor)
1 cup uncooked rice or 3 cups cooked rice
1 lb ground meat
1 packet or 3 tablespoons homemade taco seasoning
1 medium diced onion (optional)
1/4 cup cut fresh cilantro (optional)
Squeeze half a lime (optional)

Directions for Easy Taco Rice Dinner

Taco Rice Skillet Meal

First start boiling 3 cups water for the rice. Once boiling throw in the cup of rice. Cover and cook 20 minutes for white rice 40 for brown rice) or you can use already cooked rice to speed this up.

Next cook the onion until translucent in a large cast iron skillet in a little oil. Then add the ground meat and cook until brown.

Once the meat is fully cooked. Open and drain the can of beans and drain the corn and dump in the skillet. Open the can of tomatoes and dump the full can into the skillet and stir.

After the rice is cooked add to the skillet and stir together the ingredients.

To make it taste like restaurant quality you can add 1/8 cup cilantro and squeeze the juice from half a lime and stir together in the skillet. Sprinkle with fresh cilantro on top to serve.

Easy Taco Rice Mexican Dinner

Taco Rice is your go to 30 minute meal for busy weeknights. Mexican food in one pot skillet meal is a must add to your meal plan.

Tips to Make Taco Rice Meal

This is my quick Taco Tuesday meal idea to change things up a bit. Serve with additional taco toppings like sour cream, lettuce, cheese and homemade salsa. You can even serve this in fresh homemade tortillas for an easy burrito meal.  If you have any leftovers add a cup or two of chicken stock for chicken rice taco soup.
