Make Mornings Easier With Nut, Dairy and Gluten Free Oatmeal Bars

This year has its own unique challenges in my home. I have three kids, who have three different times they need to get to school. Breakfast has to be easy and simple for them to all get to where they are going on time. I have developed this easy gluten free oatmeal bar recipe to help with those crazy mornings.

Allergy Friendly gluten free Oatmeal Bars

Ingredients for Gluten Free Oatmeal Bars

Dry Ingredients

1 1/2 cups Bob’s Red Mill Gluten Free Old Fashion Rolled Oats
1/2 cup nuts (pumpkin seeds for nut free)
1/2 cup dried fruit (cranberries, raisins, dates or prunes)
1/4 cups seeds (sunflower, flax or sesame)
1 tsp. cinnamon (use pumpkin spice for pumpkin pie bars)
1/4 cup of brown sugar for sweetness (optional)
a dash of nutmeg (my secret ingredient)
a dash of salt

Wet ingredients
1 1/4 cup milk (use dairy free option)
1 egg
1 tsp. vanilla (use homemade vanilla extract)

Gluten Free Oatmeal Bars Recipe

Gather and measure all the dry ingredients into a large bowl . Mix it all together to combine it. I highly recommend Bob’s Red Mill Gluten Free Oats for a gluten free oatmeal bar.

Pouring Gluten Free Oatmeal Bars

Next measure the milk and vanilla in a bowl. Crack the egg and mix them all together.

Now pour the wet ingredients into the dry ingredients and stir together. It seems like is it really runny. Trust me, these will come out perfect. As it cooks the oatmeal absorbs the milk and the egg helps hold it all together.

Pour into a greased 9X9 in square baking dish and bake for 350 for 40 minutes. Cut into 8 bars. Store in the refrigerator once cut and enjoy.

These gluten free oatmeal bars are so versatile. These can be warmed up for just a few minutes in the microwave or eaten cold from the fridge. Anyone who is hungry for breakfast in the morning can just grab one and go. These bars can even be eaten in the car on the way to school. One child has to be at school by 7:00 am. That is early for this mama. The last one gets to school at 8:30.
