Easy Homemade Ice Cream Cookie Sandwiches

Do you just love those big ice cream cookie sandwiches you can buy?

They are so easy to make on your own. The best part is you can make as many as you want.

Who doesn’t like ice cream on hot summer day, right?

We had  big party at my house a couple of weeks ago. Someone left an entire box of M&M cookies. We had so much food leftover from the party, the cookies were never even opened. My kids just wanted to eat them, but I had a better idea. What about making homemade ice cream sandwiches? I nearly had to cover my ears, since the screams were so loud, “YES!”

Ingredients for Homemade Ice Cream Sandwich Cookies

Start with homemade ice cream recipe

Omit milk. Use 1 8oz package of softened cream cheese instead

Cookies (if they have been leftover from a party, even better)

Sprinkles (optional)

This is the best mixer I recommend for this recipe.

Cream Cheese For Homemade ice cream sandwich

1. Start with the 8oz package cream cheese. Place in the mixer using the paddle attachment. Whip on medium speed for about 2 minutes. This is the secret ingredient to making these the best ice cream sandwich cookies ever!

Tip: If your cream cheese is not softened (mine never is) whip for about 1-2 minutes longer.  Remove all of the cream cheese and set aside.

2. Next pour 1 pint of heavy whipping cream into the mixer with the whisk attachment. Add the vanilla here. Whisk until you have homemade whipped cream.

3. Once it is completely whipped add the powdered sugar slowly to incorporate.

4. Turn the mixer up and add heaping tablespoons of the cream cheese back into the whipped cream. Keep the mixer on med to high. This makes the creamiest homemade ice cream ever.

5. Now grab a cookie and place a heaping glob of ice cream mixture on top. Use another cookie to make the sandwich. For fun dunk the edges in sprinkles. Freeze at least 6 hours.

Easy Homemade Ice Cream Sandwiches

These make the perfect after dinner treat. My kids loved the addition of the cream cheese. It just melted in your mouth with the creamiest texture. It is best if you let them set on the counter for about a minute. They are a little easier to eat after they soften a little

    They don’t need to be frozen for a bit after their made? Amazing! I had the brilliant idea of trying ice cream cake a few years back…one of the messiest things I’ve ever done, ha, and I can see this basically being a much bigger mess if they had to sit in the freezer for a bit, ha!
    Will have to give this a go! 😀

      Yes they do. That is how ice cream is made. There is no mess at all. I have updated the recipe to reflect place in freezer when finished.

      Yes. I guess I didn’t originally put that in there. It was implied. Otherwise it is not ice cream.
