Ingredients
2CupsHeavy Whipping Creamwhipped
1Cuppowdered sugar
1TeaspoonVanilla2 for very vanilla
1 8ozpackage of softened cream cheese
Cookiesif they have been leftover from a party, even better
Sprinklesoptional
Instructions
Start with the 8oz package cream cheese. Place in the mixer using the paddle attachment. Whip on medium speed for about 2 minutes. Tip: If your cream cheese is not softened (mine never is) whip for about 1-2 minutes longer. Remove all of the cream cheese and set aside.
Next pour 1 pint of heavy whipping cream into the mixer with the whisk attachment. Add the vanilla here. Whisk until you have homemade whipped cream.
Once it is completely whipped add the powdered sugar slowly to incorporate.
Turn the mixer up and add heaping tablespoons of the cream cheese back into the whipped cream. Keep the mixer on med to high. This makes the creamiest homemade ice cream ever.
Now grab a cookie and place a heaping glob of ice cream mixture on top. Use another cookie to make the sandwich. For fun dunk the edges in sprinkles. Freeze for 6 hours
