Easy Meal Idea – Corn Dog Muffins Recipe

I found this corn dog muffin recipe and I just had to make them.

Aren’t these corn dog muffins the cutest things?

Since I like to only cook once and serve twice, I wanted to try to make these Corn Dog Muffins a little healthier. In order to make this more like a meal, I needed to add at least a vegetable. I decided to add a little dairy too, cheese. There now that is a complete meal, right?

Ingredients for Easy Corn Dog Muffins Recipe:

1 package hot dogs 
2 packages corn muffin mix 
1 can corn (drained) 
1 cup cheese 
ketchup & mustard for garnish

Directions for Easy Corn Dog Muffins Recipe:

1. Mix muffin mix according to directions on the package or make them homemade.

2. Add 1 can of corn drained and 1/2 cheese to the mixture.

3. Pour the corn muffin mix into a mini-muffin pan a little less than halfway. You need to leave some room to put the hot dog in the middle. The muffin mix will rise.

4. Cut hot dogs into about 5 or 6 pieces. Insert hot dogs into the center of min-muffins. Top with a sprinkle of cheese.
5. Place muffins in oven at 350 and cook about 1/2 the time for regular muffins, since these are mini muffins they do not need as long to cook. Mine took about 10 minutes.
This made a batch and a half for us.
Easy Meal Idea - Corn Dog Muffins

These Corn Dog Muffins are so cute with putting some ketchup on top with a little drop of mustard in the middle. We had 6 to 8 each and still had plenty left over for lunch the next day. I was thinking some sweet potato fries are a nice compliment.

The Corn Dog Muffins are perfect, since they are baked I don’t feel quite as guilty. I love the fact that these really tasted like corn dogs, since I never buy them. I don’t like to buy a lot of fried food for my kids to eat at home. These are great to make ahead and freeze for a quick and easy freezer meal on those nights you just don’t want to cook. Take a look at this ham and cheese muffin tin meal.

Oh wait you can consider the ketchup as an extra veggie, right?
