Mini ebelskivers are just delicious little round ball pancakes. Ebelskivers come from Denmark are made in a special ebelskiver pan. They are traditionally severed around Christmas time with mulled wine. I have made ebelskivers super easy using my pancake mix recipe and cake pop maker for mini pancake bites.
Ingredients for Mini Ebelskivers
2 Cups homemade biscuit mix
1/4 cup honey (or sugar, but not clean)
1 cup milk or buttermilk
2 eggs
Directions for Mini Pancake Bites
1. Measure all the ingredients and mix in a bowl. It is ok if it is a little bit lumpy. Next I like to pour mine into a pancake pen like this one to make it super easy to squeeze out. Plus you can make great pancake shapes with it.
2. Heat cake pop maker according to manufacturer’s directions. Once the maker is hot, spray with a little cooking oil and pour in the batter. While the batter is still liquid, quickly add one blueberry to each mini pancake bite.
3. Close the cake pop maker and allow to bake according to manufacturer’s directions. Mine has a little light that goes off when it is done. Lift the lid and let rest for one more minute.
4. Remove with a long skewer, chopstick or carefully with a fork. Serve with a little maple syrup, sprinkle of powdered sugar (not clean), some homemade strawberry jam (not clean) or homemade pancake syrup (not clean).
These are such a huge hit at my house with all my kids. Everyone just loves them. We usually server about 6 little bites for one serving and a glass of milk for added protein. But there are always plenty leftover for breakfast for the next few days. I like making these on a Sunday morning, so we have a few breakfast options throughout the week.

I don’t have a cake popper cooker. Can I bake these in the oven in mini muffin tins?

Great question Cristie. Yes you sure can bake them in the oven. I would say try 350 for 10-12 minutes. Then test to see if they are done. I hope this helps. If you make them please post a picture and tag @mainlyhomemade with a #mainlyhomemade. I would love to see them!

Hello!! I actually used a cake pop pan because I did not have the maker. Baked them at 350 degrees for 15 min and they came out great!
