The Best Homemade Egg Salad – Texas Style

Football and Texas seem to go hand in hand. High school football kicks off the weekend on Friday nights in most Texas towns. I know I can’t wait to attend High School football games in a year once my daughter is marching in the band. It will bring back a ton of memories. Saturdays at our house are filled with college football. All Day long football is on the screen. Then Sunday starts the pro football teams and this may bleed into Monday night football. This is how I grew up watching Texas football. With a good football also comes good food.

We love to have snacks and dips to munch on during the day or for tailgating  while watching our Texas teams. Texas style homemade egg salad is a huge win at our house. I made this homemade egg salad Texas style with avocados, jalepenos and bacon. You just can’t go wrong with bacon. This really has all the flavors that reminds me of Texas in one bite. Texas football is Texas pride.

Ingredients for Best Homemade Egg Salad Recipe

6 boiled Lone Star Eggs
4 slices of cooked bacon
1/2 Avocado
1/2 cup Feta Cheese
10 slices of Jalepeno (more or less for spicy or mild)
Juice of 1/2 Lime

Homemade Egg Salad Recipe Eggs

1. Boil 6 Lone Star Eggs found at Walmart. I love how easy these eggs are to peel after being boiled. Tip for Perfect Hard Boiled Eggs Every Time:  once the water starts to boil, put in about 3-4 ice cubes to cool the water just a bit. Then with a slotted spoon gently place the eggs in the hot water. Wait for the water to start to boil again, then time for 10 min. After 10 min drain the water and fill with cold water and tons of ice to get the perfect hard boiled eggs every time! Cooling them quickly makes them super easy to peel.

2. Cut each of the eggs in half and scoop out the yellow yolk in a large bowl. Next add half of a large ripe avocado. If the avocado is small use the whole one. Now mix the yolks and smash the avocado and squeeze half a lime to make a smooth creamy mixture. I like to mix the yolks and the avocado by themselves, since I like it to be really smooth and creamy. The avocado replaces the mayo for this recipe to make make it super outdoor friendly and no need to worry about this egg salad going bad.

3. Next chop the remaining egg whites. Then chop the four slices of bacon into small bits, add the feta cheese and the ten minced slices of jalapeno all into the bowl. Stir to combine thoroughly.

4. Serve with bread or crackers and enjoy. Tip: To keep the avocado from browning after you have put it in a container, spray the top with a fine mist of oil. I doubt you will have any leftover if you bring this to a party, it is soooo good.

    I do not like feta…it is too salty for me. What do you suggest as a substitute?

      Thanks for your question Darlene. I would say to use your favorite cheese. I would suggest Colby, Monterrey Jack or Colby Jack for a less salty option.
