Easy Chicken Tortilla Soup Recipe in Under 30 Minutes

It is the new year, and both my husband and I are working on a new us. He is hitting the gym, and I am in a kickboxing class. Not only are we working out, but we are trying to eat better too. The kids are not always on board with our healthy eating choices. This makes it a challenge to find something we all can eat. Sometimes eating better takes a lot more time to prepare a dish. Who has time for that?

While I was in Walmart the other day, I was looking at soups to purchase to help us reach our new goals. I saw the Progresso Light Chicken Noodle soup and wondered if I could make this into a dish the entire family would eat. Then I thought about making easy chicken tortilla soup.

Easy Chicken Tortilla Soup Recipe

Easy Chicken Tortilla Soup Recipe

Ingredients Easy Chicken Tortilla Soup

2 cans Progress Light Chicken Noodle Soup
1 can diced tomatoes
1 can corn
1 can beans (drained and rinsed)
2 tablespoons taco seasoning
1/4 cup cilantro
1/2 onion
2-3 green onions
juice of 1/2 lime
Greek Yogurt and tortilla chips for garnish

Direction to make Easy Chicken Tortilla Soup

First slice the onion saute until translucent. I like to add an onion to any dish I make. Onions have tons of flavor and adds an additional vegetable to the dish.

Once the onion is cooked, add in two cans of Progresso Light Chicken Noodle Soup. Then add tomatoes, corn, black beans and taco seasoning. I like to use my homemade taco seasoning.

After all the cans have been added allow the soup to come to a simmer for around 20 minutes.  While waiting on this to simmer, start cutting the cilantro, green onions and have the lime ready.

After the soup soup simmers for 20 minutes, remove from heat. Then add the cilantro, green onions and squeeze the lime. Stir one more time, then serve with Greek yogurt.

Pro tip: Adding fresh ingredients right at the end, makes it taste just like the restaurants.

This turned out to be a hearty, filling soup the entire family raved about. Easy Chicken Tortilla Soup Recipe in Minutes

For those super busy nights, you can have a hot meal on the table start to finish in about 30 minutes. I enjoy using Greek yogurt instead of sour cream, since it tastes about the same with fewer calories. Adding additional veggies to any dish, is a good idea and helps keep you full. Eating soups is a sneaky way I can get my kids on board with eating better, even if they don’t want to. This is one meal I can add my list when I need dinner in hurry.
