Creamy Homemade Vanilla Pudding Without Cornstarch

Rich creamy homemade vanilla pudding reminds me of home.

My mom always made me pudding growing up. Recently I realized I rarely make pudding for my kids. I set out to change that with making some homemade vanilla pudding for them. Having a cool and good for you treat in the summer time is always fun to start making new memories.

Ingredients for Homemade Vanilla Pudding

2 Cups Milk

2 tablespoons Arrowroot Powder

1/4 Cup sugar

1/4 teaspoon salt

1 egg

1 teaspoon homemade vanilla(see how to make your own)

Supplies Needed:

Sauce pan (I recommend these)

Whisk

Glass Measuring cups 

Measuring spoons(I love these since they fit into spice jars)

Glass Mixing Bowl (I love these)

Small Glass Storage Cups with lids for storing pudding

Directions for Homemade Vanilla Pudding

In medium size sauce pan mix all the dry ingredients sugar, arrowroot powder, and salt.

In a separate bowl beat the egg with a whisk for about two minutes. Slowly add the milk while still whisking for at least another minute longer to combine together.

Slowly pour the wet ingredients into the saucepan containing the dry ingredients. Whisk the mixture together as you pour to fully combine.

Keep the heat on medium low and continue to whisk. After a few minutes the mixture will start to thicken. It is almost like magic it will thicken. Stir for about 1 more minute then take off the fire. Continue to whisk for two more minutes then add the homemade vanilla.

Is vanilla pudding and custard the same?

Traditionally pudding is thickened with cornstarch. With this recipe I used arrowroot powder which is an allergy friendly substitute, but it is still a starch. Custard is made with eggs to thicken the liquid instead of a starch. They are basically pudding and custard are the same. The big difference is custard is made with eggs, whereas pudding is made with starch.

Can you substitute vanilla pudding for custard?

My kids thought this creamy homemade vanilla pudding was like heaven. I felt good knowing the ingredients were good for them too.     Good day, Amy,

    I happened to come across your blog looking for a vanilla pudding recipe without cornstarch, substituting arrowroot, and I found yours. I just made a about an hour ago, and it turned out very smooth and delicious. I substituted 2 Tablespoons of maple syrup for the sugar and it was plenty sweet for me. I added a pinch more of the arrowroot, since I was adding another fluid. But, I think next time, instead of cooking the syrup, I may try added it with the vanilla extract at the end. It does have a more gooey texture than cornstarch would give, but since I’m having some digestive issues at the moment and prefer not using corn products when I can, I decided to try the arrowroot. I also just read that arrowroot is good for helping with digestive problems.

    Thank you for sharing this recipe. I’m sure I’ll make it often, as I love puddings and custards, but not a lot of sugar, so I always prefer making things from scratch so I have a little more control over ingredients. Well, I’m off to check out some more of your blog. I pray you and your family are safe and sound during this Covid issue. I’m praying that people find their way back to family and home and the ideal of making our home a sanctuary where love and nurturing are the norm.

    Hi, Amy,

    I popped over to your craft section. I remember those days of creating with my son, when he was school-age. Those days are gone, but he turned out to be a fine young man, with nice memories of things we did together. I liked the idea for the naturally dyed Easter eggs, as well as the cute gift ideas.

    By the way, I’m in Texas, as well, though I grew up in New Jersey, and even after 40+ years of living in Texas, I still miss the 4 seasons. Enjoy your Memorial Day weekend.

    Perfect recipe. Thank you. I added 1/3 cup cocoa, which I cooked with the sugar in some water first and then melted some chocolate chips in. I mixed the rest of the ingredients together and added them to the chocolate and proceeded according to the recipe. I even subbed in coconut milk, and it turned out perfect. I wanted you to know how versatile your wonderful recipe is.
