Simple Homemade Lentil Soup Recipe

Homemade lentil soup is one of the easiest and fastest soups to make in a pinch.  There is nothing better than to have hot soup on cold winter nights to warm you from the inside out. This soup is packed full of nutrition. The protein from the lentils makes it a great filling meal for everyone on game day. I love to make this soup for a week night meal or make extra and freeze for cold nights.

Easy Homemade Lentil Soup Recipe

Ingredients for homemade lentil soup

1 pound lentils (can be green or red)
4-6 Cups chicken stock
1 teaspoon salt (if stock is not salted)
1 14oz can diced tomatoes
1/2 cup carrots finely chopped

Directions how to make Homemade Lentil Soup

Homemade Lentil Soup Recipe in the pot

1. I make my own homemade chicken stock and freeze it, but you can use store bought. Place chicken stock in a large pot and heat until warm. Rinse lentils in a colander before adding to the pot. Check to see if the liquid is about 2 inches above the lentils. If not, add some water to cover.

2. Add lentils, carrots and salt to the pot and cover. Allow to simmer for about 20 minutes on low. At this time, I like to check to make sure the liquid is still covering the lentils. The lentils start to plump up quickly in the pot. Just make sure there is enough liquid to cover them. It is ok to keep adding water as they cook. Keeping the lid on ensures the water stay inside the pot.

3. The lentils should be done in about 30 minutes. At this time add the can of diced tomatoes. The lentils will not cook properly if the tomatoes are added too soon. Warm up the soup with the tomatoes for about five minutes.

4. Serve in a bowl and enjoy.
