Easy Dinner Ideas – Tamale Chili Cups {Made with Wolf Brand Chili}

One of my fondest memories growing up in Texas is sitting down to watch football with a big, hot bowl of chili. Besides my dad’s chili, my favorite chili has always been Wolf Brand Chili with no beans. Real Texans do not put beans in chili. Chili can be eaten in so many different ways.  I love to eat chili and corn bread. I am always trying to find easy dinner ideas, so I came up with a recipe that combines two great things together to make my Tamale Chili Muffin Tin recipe. This is an awesome simple dinner idea to fix on any busy night.

Easy Dinner Ideas – Tamale Chili Muffin Tin Meal

 Tamale Chili Cups Quick Easy Dinner #ad

Ingredients for Tamale Chili Muffin Tin Recipe:

Batter:
2 Eggs
1/4 Cup Biscuit Mix
1/4 Cup Corn Bread Mix
1/2 Milk

2 Cans Wolf Brand Chili – Hot, Mild or Regular  (no beans)

Directions for Easy Dinner Ideas – Tamale Chili Cups:

How to Make Muffin Tin Batter #ad

1. Combine all the ingredients for the batter and whisk together. It will be really thin and that is OK.

2. Spray each muffin cup with oil or use muffin pan liners. You must do this or it will stick. Add a scant Tablespoon of batter to the 12 muffin cups. (Scant is not quite full)

3. Next add a scant 1/4 cup of Wolf Brand Chili to each muffin cup. The new thick recipe works the best.

4. Top with a Scant Tablespoon of batter to the the top of all the muffin cups. Remember less is more with this recipe.

5. Bake in the oven at 350 degrees for 20 – 25 minutes. I baked mine for 23 minutes and these chili cups were perfect.

6. Remove from muffin tin and serve with various toppings. We used plain yogurt, cheese, hot sauce and jalepenos. Really what ever you like with chili will go great with this dinner idea.

These turned out so well because of the new thicker and heartier chili recipe from Wolf Brand Chili with no beans, just the way Texans like it. I don’t think any other chili would not work as well. I was going to name this corn bread chili muffin tin meal. Both my husband and I thought they tasted a lot like tamales. The kids really enjoyed this recipe too, since it is so simple and they can add there own flavor. I have found creating a basic menu that each person can customize works the best for our family.     I still enjoy chili the same way I did as a kid, with buttered crackers. I either smash them or dip them. I need to kick it up a notch next time.

    By itself, i like to add crumbled crackers. But we also like to make a chili-dog pizza with the chili in place of sauce with wieners, onion and cheese on top.
