Quick and Easy Butternut Squash Soup
Ingredients for Butternut Squash Soup
2 lbs Butternut squash Puree (Easy Butternut Squash in a slow cooker)
3 cups Chicken Stock (Easy Homemade Chicken Stock)
1/2 cup Cream
1/4 teaspoon nutmeg (just a small dash)
1 teaspoon Thyme (more for garnish)
Salt and Pepper to taste
Yogurt (Homemade yogurt in slow cooker)
Directions for Easy Butternut Squash Soup Recipe
1. In a large stock pot add the butternut squash puree, chicken stock, nutmeg, and 1 teaspoon thyme. Bring all the ingredients to a simmer.
2. Once heated, puree with an immersion blender for a buttery, smooth creamy soup. Add a little salt and pepper to taste. It depends on how much salt is in the chicken stock, if you need to add any at all.
3. Remove from heat and allow to cool for a few minutes. If you don’t allow to cool just a little, the cream will curdle once your stir it in.
4. Slowly stir in the cream. Garnish with a spoonful of fresh plain yogurt and a sprig of fresh thyme. Then you have super easy butternut squash soup.
