Easy Butternut Squash Soup Recipe

Finally it is starting to feel like fall here in Texas. Fall means open season for soup. This butternut squash soup is so easy to prepare. This is perfect to make during the fall when butternut squash is in season. Try this soup for a meatless meal option during the week. A budget saver and a time saver meal idea.

Quick and Easy Butternut Squash Soup

Easy Butternut squash soup recipe

Ingredients for Butternut Squash Soup

2 lbs Butternut squash Puree (Easy Butternut Squash in a slow cooker)
3 cups Chicken Stock (Easy Homemade Chicken Stock)
1/2 cup Cream
1/4 teaspoon nutmeg (just a small dash)
1 teaspoon Thyme (more for garnish)
Salt and Pepper to taste
Yogurt (Homemade yogurt in slow cooker)

Directions for Easy Butternut Squash Soup Recipe

1. In a large stock pot add the butternut squash puree, chicken stock, nutmeg, and 1 teaspoon thyme. Bring all the ingredients to a simmer.

2. Once heated, puree with an immersion blender for a buttery, smooth creamy soup. Add a little salt and pepper to taste. It depends on how much salt is in the chicken stock, if you need to add any at all.

3. Remove from heat and allow to cool for a few minutes. If you don’t allow to cool just a little, the cream will curdle once your stir it in.

4. Slowly stir in the cream. Garnish with a spoonful of fresh plain yogurt and a sprig of fresh thyme. Then you have super easy butternut squash soup.

This easy butternut squash soup is so quick to put together and a great way to eat clean on a budget. This will warm up your insides with its creamy buttery flavor. I like to add the yogurt to give this easy butternut squash soup for a little extra added protein.  This soup makes a lot and is great to freeze.
