I just discovered something absolutely wonderful.
Mug muffins.
I know you have seen the mug cakes, but I looked at those and there were just too many ingredients for me to gather to make a quick cake.
Something simple, quick and easy, is just my style. Plus I wanted a hot and easy to make for breakfast that my kids would eat too. And a breakfast a little more on the healthy side.
Apple Mug Muffin

Ingredients for Apple Mug Muffin
1 packet GoGo Squeez applesauce (you can use any flavor applesauce, affiliate link)
1 Egg
1 Tablespoon Oatmeal (Quick cook or Rolled)
Spray oil to coat the mug
Optional
Sprinkle of cinnamon
1 Tablespoon of honey
Directions on how to make Apple Mug Muffin
First spray oil around the inside of the mug, so the muffin won’t stick.
Next break open an egg into the mug and add the GogGo Squeez applesauce and oats. Stir until the egg is mixed really well with the rest of the ingredients.
No need to dirty another dish, just mix it all in the mug. I have tested it with quick cooking oat and just rolled oats. Both turns out fine. The rolled oats has more of a texture to it. If you want add some cinnamon or honey to make it sweeter.
Cook in the microwave for 1 minute. Mine is not typically done in one minute, but my microwave stinks. I usually turn it and place it in there for one more minute.
Let rest for one minute after you take it out of the microwave to help it cool down a bit. It will be extremely hot, so use caution when eating.

I almost feel a little guilty eating this for breakfast, since it tastes like I am eating a cake. You may not know this, but cake is my absolute favorite thing in the entire world. So to find a healthier way to have my cake and eat it too, just makes my day.
Our mornings are what can I say, hectic. Making a high protein breakfast with eggs and fruit makes a great way to start the day. Served with a glass of milk this makes a great breakfast.
This little muffin packs a punch. It not only warms you up, but also keeps you full all morning long. Have fun making these tasty muffins in your own Sharpie decorated mug.
