I am excited Bush Brothers sponsored our new take on taco Tuesdays with Meatless Fiesta Burrito bowls #cocinalatinabeans. All thought on these beans are my own.

Tired of boring taco Tuesday? I am too! Spice things up with a Bush’s Cocina Latina beans.  Make burrito bowls for a quick weeknight meal the entire family will love. How fun to customize each burrito bowl to add your favorite toppings. I love how simple this meal is to make on a busy weeknight. I’ll show you how to make the best homemade burrito bowl ever.

Fiesta Meatless Burrito Bowls

Ingredients for Meatless Burrito Bowls

Bushs bean for meatless burrito bowls

3 Cups Cooked Cilantro Lime Rice
1 Can Bush’s Cocina Latina Beans (7 varieties to choose from)
1 Avocado
1 Tomato
1 Can Corn
Salsa (fresh or homemade)
Sour Cream (or plain yogurt)
Cilantro

Directions How to Make Meatless Burrito Bowls

  1. First cook the rice. Tip: I like to add 1 cup chicken stock to my rice for added flavor. Once rice is cooked add the lime and cilantro and a dash of salt.
  2. Heat the beans and corn in a sauce pan on the oven.
  3. Cut up all the veggies you want to top it off.
  4. Recommend serving. Fill bottom of the bowl with cilantro lime rice. Line up beans, corn and veggies all around. Garnish with some cilantro, salsa and sour cream.

A healthy way to make taco Tuesday a little more fun. Everyone can design their bowl however they like. Just like a taco, but with no shell. These meals work out perfectly in my family, since everyone likes something different.

Bush’s makes it easy with seven varieties of beans to choose from your favorite flavors. Pick them up at your local Walmart store in the Mexican food aisle. Spice it up with Pintos a la Diabla or keep it simple with Refried Beans. Whatever your tastes buds prefer, they have a flavor to satisfy.
