First wash all the strawberries. Then pat them dry.
Next cut them in to small pieces and place in a pan over medium to low heat to cook for a few minutes. If you want you can add a 1/2 cup of water here. If you do, you can let the strawberries cook a little longer to make the syrup thicker.
After the strawberries have cooked for a few minutes add the sugar and lemon juice and stir. Keep cooking until the desired thickness. This took me about 10 minutes for a deep red and thick syrup.
After you take the syrup off the heat add vanilla for another powerful level of flavor to the syrup.
Serve with homemade pancakes, strawberry shortcake, or add a couple of table spoons to milk for strawberry milk.
