Buttery Whole Wheat Homemade Pop Tarts Recipe

This homemade pop tarts recipe is a healthier option than the store bought version. Plus these little gems can be made with whatever fillings you choose.

For the Pastry

  • 2 cups Whole Wheat Pastry Flour clean eating
  • 1 Tablespoon Honey
  • 1 Teaspoon Salt
  • 1 Cup Butter
  • 1 Large Egg
  • 2 Tablespoons Milk

For the Filling

  • Pears or whatever is your favorite filling
  • Honey to sweeten

For the Glaze

  • 1 Teaspoon Cinnamon
  • 2 Tablespoons Honey


  1. First make the pastry for these tarts. Whisk together flour, sugar, and salt. Next add pats of butter using a pastry blender and blend in the butter with the flour mixture until its a crumbly mixture. Using a pastry blender can be a great way to get out some aggression.
  2. In another bowl whisk together the milk and eggs.
  3. Create a well in the center of the dry ingredients and add milk and eggs slowly, covering with the flour mixture as you go. Once all the milk and eggs are in there feel free to mix with hands until a nice dough ball forms. This is the part that is therapeutic about baking.
  4. Take the dough ball and divide it into two separate pieces for the top and bottom of the pop tarts. On a floured surface begin to roll out the bottom of the pop tarts then the top to about a 9X12 inch rectangle.
  5. Here is where a little measuring is needed to get those perfect rectangle shaped pop tarts we all know and love. Measure out 3 X 4 inch rectangles with a ruler and cut with a sharp knife.
  6. Fill each pastry with about a tablespoon of filling. A little goes a long way. For these little tarts I made a pearsauce very similar to my homemade applesauce recipe and added a couple of table spoons of honey to sweeten the treat.
  7. Paint an egg wash around the edges of the rectangles. Place the other pastry on top and seal with a fork around the edges to give it that crinkle on the side.
  8. Bake on a parchment lined pan in the oven at 350 for at least 15 minutes or until golden brown. Allow to cool completely before add the cinnamon honey glaze.
  9. Mix the honey and cinnamon for the glaze and drizzle over the tops of the homemade pop tarts.
