The Best Homemade Egg Salad - Texas Style

  • 6 boiled Lone Star Eggs
  • 4 slices of cooked bacon
  • 1/2 Avocado
  • 1/2 cup Feta Cheese
  • 10 slices of Jalepeno more or less for spicy or mild
  • Juice of 1/2 Lime


  1. Boil 6 Lone Star Eggs.
  2. Tip for Perfect Hard Boiled Eggs Every Time: once the water starts to boil, put in about 3-4 ice cubes to cool the water just a bit. Then with a slotted spoon gently place the eggs in the hot water. Wait for the water to start to boil again, then time for 10 min. After 10 min drain the water and fill with cold water and tons of ice to get the perfect hard boiled eggs every time! Cooling them quickly makes them super easy to peel
  3. Cut each of the eggs in half and scoop out the yellow yolk in a large bowl. Next add half of a large ripe avocado. If the avocado is small use the whole one. Now mix the yolks and smash the avocado and squeeze half a lime to make a smooth creamy mixture. I like to mix the yolks and the avocado by themselves, since I like it to be really smooth and creamy. The avocado replaces the mayo for this recipe to make make it super outdoor friendly and no need to worry about this egg salad going bad.
  4. Next chop the remaining egg whites. Then chop the four slices of bacon into small bits, add the feta cheese and the ten minced slices of jalapeno all into the bowl. Stir to combine thoroughly.
  5. Serve with bread or crackers and enjoy.

  7. To keep the avocado from browning after you have put it in a container, spray the top with a fine mist of oil. I doubt you will have any leftover if you bring this to a party, it is soooo good.
