Simple Homemade Lentil Soup Recipe

This easy homemade lentil soup recipe is done in about 30 mins. Quick and easy warm meal idea packed full of protein.

  • 1 pound lentils
  • 4-6 Cups chicken stock
  • 1 teaspoon salt if stock is not salted
  • 1 14 oz can diced tomatoes
  • 1/2 cup carrots finely chopped


  1. I make my own homemade chicken stock and freeze it. Place chicken stock in a large pot and heat until warm. Rinse lentils in a colander before adding to the pot. Check to see if the liquid is about 2 inches above the lentils. If not, add some water to cover.
  2. Add lentils, carrots and salt to the pot and cover. Allow to simmer for about 20 minutes on low. The lentils start to plump up quickly in the pot. Just make sure there is enough liquid to cover them. It is ok to keep adding water as they cook. Keeping the lid on ensures the water stay inside the pot.
  3. The lentils should be done in about 30 minutes. At this time add the can of diced tomatoes. The lentils will not cook properly if the tomatoes are added too soon.
  4. Serve in a bowl and enjoy.
