Better than your grandma's rice pudding recipe. This Rice Pudding Dip is exploding with flavor and creaminess perfect for dipping with fruit.
1cupand ¼ cup Almond Coconut Milkseparated
1zest of a small orange
Start with the milk in a small sauce pan on the stove on low med heat. Once the milk starts to bubble add Mahatma Organic Rice, orange zest and vanilla. By putting all of these in first your rice absorbs all these flavors.
Set your timer to 20 minutes and let cook on low heat.
Once it is completed cooking add nutmeg, sugar and cream cheese. Stir until the cream cheese is melted. Then remove from the stove and let cool. This will thicken up nicely.
After it has cooled a bit, add about 1/4 cup of almond coconut milk. Stir until completely mixed. Grab a handheld blender or food processor and blend together. It has the consistency of tapioca pudding or cottage cheese.
