Do you love rice pudding?
It is seriously one of my favorites and so easy to make.
My mom has this blue cookbook that contains the most amazing recipes in it. I was looking through it and saw a recipe for rice pudding with ingredients I have never seen before in rice pudding. I just had to try it and put my own spin on it of course just in time for March Madness.

The Best Rice Pudding Dip For Fruit

Ingredients for Rice Pudding Dip
1 cup and ¼ cup Almond Coconut Milk (separated)
1 cup Mahatma Organic Rice
3 teaspoons Sugar
1 zest of a small orange
¼ teaspoon nutmeg
1 teaspoon vanilla
1 oz. cream cheese
Directions for Rice Pudding Dip Recipe
Start with adding the milk in a small sauce pan on the stove on low med heat. Once the milk starts to bubble add Mahatma Organic Rice, orange zest and vanilla. By putting all of these in first your rice absorbs all these flavors.
Set your timer to 20 minutes and let cook covered on low heat.
Once it is completed cooking add nutmeg, sugar and cream cheese. Stir until the cream cheese is melted. Then remove from the stove and let cool. This will thicken up nicely.
After it has cooled a bit, add about 1/4 cup of almond coconut milk. Stir until completely mixed. Grab a handheld blender or food processor and blend together. It has the consistency of tapioca pudding or cottage cheese.
Sprinkle with cinnamon or a little nutmeg and serve with fresh fruit.
To make basketballs use a permanent marker and draw a basketball shape. I just free handed it and it turned out so cute. Don’t you think.

This tasted way better than any rice pudding I have ever had. I normally have rice pudding with cinnamon. This one blows them out of the water with so much flavor in every bite. Kids will love to keep dunking their fruit in this dip. Make cute little orange basketballs to celebrate March Maddness.
