Growing up in Texas is like growing up in another country. I have traveled many places in my life. It seems other states just don’t have the same pride in their state as someone from Texas. One thing that makes Texas so unique is all the little pockets of culture sprinkled throughout the state. Around Austin is where the original German and Czechs settled, and where I am from. You can find some amazing German and Czech food, like kolaches. San Antonio is known for the best Tex-Mex and Ft. Worth is know for its steak.

10 Reasons I Love being Texan

  1. Bluebonnets – No where else are the sides of the road covered in a sea of blue except driving through Texas in the spring.
  2. Kolaches – This is the best kept secret in Texas. In my small town we had two bakeries for kolaches, since we couldn’t get enough.
  3. It’s Own Nation – Texas fought for its freedom from Mexico and won. Not many other states can say that.
  4. Football – Most small towns revolve around football in Texas. Mainly because there is nothing better to do on a Friday night.
  5. Texas State Fair – If you want to try something fried, just go to the Texas State Fair.
  6. BBQ – Nothing better than Texas BBQ any day.
  7. The Alamo – You just always remember the Alamo.
  8. The Weather – It is always in a constant state of change. If you don’t like it stick around it will change.
  9. Agriculture – Just about everything is grown or produced here in Texas. From eggs to produce, we grow it here.
  10. Family – It seems the deep root to most Texas pride is family. Not only are people born here, but so are their ancestors.

As a family Sunday breakfast was an important meal we did not miss around the house. Mom always made something sweet and if dad was cooking it was a something savory like eggs and bacon. No matter what we gathered around the table every Sunday to a big meal. Mainly because my mom had the rest of the day off. I also make it important for my family to gather around the breakfast table each Sunday for a great breakfast.

Lemon Blueberry French Toast Recipe

Lemon Blueberry French Toast Casserole

Ingredients for Lemon Blueberry French Toast Recipe

8 Lone Star Eggs
1/2 cup sugar
1 1/2 cups milk
2/3 cup cream
2 tablespoons maple syrup
1 tablespoon honey
1 teaspoon vanilla
1/2 cup unsalted butter, melted (1 stick)
1 loaf french bread toasted, cubed into pieces
8 ounces cream cheese, cubed
1 cup Texas blueberries
zest of 1 lemon
1 tablespoon cinnamon

Direction on How to Make Lemon Blueberry French Toast Recipe

1. Preheat oven to 350 F.

2. In a stand mixer, whisk together eggs, sugar, whole milk, cream, maple syrup, and vanilla on low to medium speed. Whisk for about a minute or two.

3. In a separate bowl, melt the 1/2 cup butter. Add the butter to the egg mixture and whisk thoroughly, for about another minute to thoroughly combine.

4. Spray a 9×13 inch casserole dish with nonstick spray. Spread half of the bread over the bottom of the dish, then sprinkle half of the cream cheese chunks over the top. Then add about half of the lemon zest and half of the blueberries. Add the rest of the bread, then sprinkle with the remaining cream cheese, lemon zest and blueberries. It is kinda like layering a lasagna.

5. Pour the egg mixture evenly over the top of the pan, making sure to get all of the bread wet. I like to use a ladle to ensure I get all over the top of the dish.

6. Finish off with a sprinkle of cinnamon. Add as little or much as you wish.

7. Bake at 350 F for 40 minutes.

8. Let cool for a few minutes, then serve with maple syrup, blueberries and Texas pecans.
